Tonight I am going to a Welcome Fall soup potluck, and I am bringing my favorite soup. I used to have absolutely no idea how to make soup. I didn't realize that most soup is just broth+something to put in the broth. Maybe it can be a little more complicated than that, but not much. And what is autumn without soup, I ask you?
So here is the favorite soup recipe around our house. I'd love to hear what everyone else's favorite soups are. Leave a link or the entire recipe in the comments.
Curried Butternut Squash Soup
1 large onion, chopped
2 cloves garlic, minced
2 TBS olive oil
4-5 cups vegetable or chicken broth
1 2-3 lb butternut squash, peeled and cubed
1 TBS curry powder (more curry powder=spicier!)
1 tsp pumpkin pie spice (or a little bit each of nutmeg, cinnamon, ginger, etc)
1-2 TBS honey
In large soup pot, heat olive oil over medium heat. Sautee onions and garlic until onions are tender. Add squash, broth, spices, and curry powder. Bring to a boil, then cover and simmer for 15-20 minutes, until squash is very tender. Take off heat and stir in honey. Pour in a blender or food processor (in batches, if necessary), or use an immersion blender to puree until smooth. Pour back into pot or serving bowl, and your'e done! Or, simmer for a few more minutes if you wish to thicken the soup or concentrate the flavor. If desired, top with plain yogurt (adds a bit of tang) or drizzle with some cream or half-and-half.

I would have to say that the favorite soup in this house is my potato soup/chowder, hands down. The problem is, I have no REAL recipe for the soup, and so it is always a rather hit-n-miss endeavor whenever I make it. I guess the bacon makes up for any miss, though, heehee.
My favorite soup is either this one, on my blog, or split pea soup. I don't have a special recipe for split pea, though. I like that split pea is so cheap and easy to make (especially if it's vegetarian)!
